Cooking a turkey is either a horrifying experience or a piece of cake. Or so people said when I told them my plans to cook my first turkey this Thanksgiving. Seeking guidance, I rolled up Interstate 93, to the landmark Hart’s Turkey Farm and Restaurant in Meredith to meet with head chef Mike Cornelissen, a man whose livelihood is tightly tied to his turkey-cooking talent. “It’s easier than you think it might be.
