I am a whole-food, plant-based vegan (as strict as they come) and recently had my first Impossible Burger in Lexington, Ky., while on vacation. Since it has been four years since I tasted a beef burger, my palate has changed. I was amazed and thought the Impossible Burger tasted exactly like a beef burger.

I do know David Brooks (Monitor front page, April 16) tasted version one of the burger while I had the version two, which is supposed to be even better. I am overjoyed to find another tasty vegan menu item when dining out.

One facet of the discussion was not included in your article. Today many people avoid animal fat, especially beef, for health reasons. It’s exciting to find food companies are addressing the need for healthier and sustainable alternatives. The more people demand these alternatives, the more will be developed, hopefully leading to a healthier population and planet.
